Meatloaf
(Recipe from Paula Deen)
Ingredients:
1 lb lean ground beef
1 1/4 tsp kosher salt
1/4 tsp black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, beaten
8 oz. diced tomatoes, drained (after a 14.5 oz. can is drained, it's about 8 oz.)
1/2 cup quick cooking oats
Sauce:
1/3 cup ketchup
2 Tbsp brown sugar
1 Tbsp mustard
Directions:
1) Preheat oven to 375 degrees.
2) In a bowl, combine all meatloaf ingredients and transfer to greased loaf dish.
3) In a separate bowl, combine sauce ingredients; mix well.
4) Spread sauce evenly on meat mixture.
5) Bake for 1 hour.
